BROCCOLI & AVOCADO SALAD
Ingredients
  • I lb. Broccoli (cut in pieces)
  • 1 ripe avocado
  • 2 table. Extra virgin olive oil
  • 2 table. lemon juice
  • 1 table. Grainy mustard
Preparation

Cook broccoli till crunchy tender. Drain. Cut avocado into small cubes. Fold the avocado into the broccoli. Whisk olive oil, lemon juice, and mustard together in small bowl. Toss the broccoli and avocado with the dressing

CARROT SOUFFLE
Ingredients
  • 1 lb. carrots, peeled and sliced
  • 3 eggs
  • 3 T granulated sugar
  • 3 T flour
  • 1/2 t vanilla extract
  • 1/4 t ground nutmeg
  • 3 T melted butter
  • 1/2 c chopped walnuts or 1/4 c crushed cornflakes
  • 1 T brown sugar
  • salt
Preparation

Cook carrots in boiling salted water until very tender (about 15 min). Puree carrots in food processor or blender with eggs, granulated sugar, flour, vanilla and nutmeg. Add 2 T melted butter and process again.

Put mixture into greased 1-1/2 quart soufflé dish (sprinkle pan with a bit of sugar) and bake at 350 degrees until soufflé is slightly puffed and golden, 35 to 40 minutes. Sprinkle chopped walnuts and brown sugar over top of soufflé. Drizzle with remaining melted butter and return to oven 10 to 15 minutes longer or until top is crisp and golden.

CAULIFLOWER WITH DILL
Ingredients
  • 1 head cauliflower, cut into flowerets
  • 1 tsp. Dijon mustard
  • 1 T. balsamic vinegar
  • 1 T. lemon juice
  • 1 green onion, chopped
  • 2 T. fresh dill, minced
  • 2 T. olive oil
  • salt and pepper to taste
  • garnish with 1/2 cup walnuts (optional)
Preparation
  1. Place cauliflower in a steamer or in a colander set inside a saucepan of boiling water. Cover steam cauliflower until tender.
  2. In a mixing bowl, combine mustard, vinegar, lemon juice, onion, dill, olive oil, salt and pepper; whisk well.
  3. Place cauliflower in a serving bowl and toss with dressing. Garnish with walnuts if desired.

CORN CASSEROLE
Ingredients
  • 1 (15 oz) can kernel corn (drained)
  • 1 (15 oz) can creamed corn
  • 1/4 stick butter
  • 1 (8 oz) carton sour cream
  • 1 (6 oz) pkg. jalapeno cornbread mix
Preparation

Mix all ingredients and pour into a 9 x 5 greased baking dish. Bake at 350 for 35 minutes

GARLIC SNOW PEAS
Ingredients
  • 2 T. olive oil
  • 2 large garlic clove, smashed
  • 8 oz. (2 cups) fresh snow peas, trimmed
  • salt, pepper
Preparation

Heat oil in large skillet. Add garlic and sauté for one minute. Add snow peas and saute over high heat 3 minutes or until tender and lightly browned. Season with salt and pepper to taste.

Makes 4 servings.
