OVEN BAKED FRIES
Ingredients
  • 4 large potatoes , peeled and wedged (you could use sweet potatoes)
  • vegetable oil or Pam
  • salt & pepper
Preparation

Preheat oven to 450. Spray Pam on cookie sheet. Place potatoes on pan and then spray with Pam. Sprinkle with salt and pepper. Bake for 10, turn potatoes and bake for 10 more minutes.

POTATO LATKES
Ingredients
  • 4 large potatoes (4 ½ cup grated potatoes)
  • 2 eggs
  • 2 teaspoon salt, dash pepper, dash cinnamon
  • 2 tablespoon flour
  • 1 large onion (grate fine or put in blender)
  • ½ teaspoon baking powder
Preparation

Grate potatoes with a fine grater or in the blender. Pour off half the liquid. Beat eggs and add to the potatoes. Add salt, pepper, cinnamon, flour, onion and baking powder. Drop mixture by spoonful onto hot well-greased frying pan. Brown well, turn once with spatula and brown on the other side. Lay them on a paper towel to drain fat. Makes 30-36 lotkas

Serve hot with applesauce & sour cream.

SAUSAGE STUFFING
Ingredients
  • 4 packs ground pork sausage
  • 2 large onions
  • 8 to 10 celery stalks
  • 2 Country French bread loaves
  • Salt-pepper
  • Olive oil
Preparation

Soak bread in water. Sauté onions and celery in large pot in olive oil. Add sausage. Drain off excess fat after browned. Squeeze water from bread and mix into sausage mixture.

Yorkshire Pudding #1 (I like this because it makes individual servings)
Ingredients
  • 2 eggs
  • 1 cup milk
  • one half teaspoon salt
  • 1 cup all-purpose flour
  • 2 Tablespoons drippings
Preparation
  1. Heat oven to 400 degrees
  2. In a medium bowl, beat eggs with wire whisk until foamy;
  3. beat in milk and one half teaspoon salt; gradually beat in flour
  4. until batter is smooth.
  5. When roast is done, spoon off 2 Tablespoons drippings and
  6. divide into twelve 3-inch muffin (cupcake) cups; tilt to coat
  7. evenly (I use a basting brush instead because it seems safer)
  8. Heat muffin pan in over for 5 minutes; pour 2 and one half
  9. Tablespoons batter in each greased cup. Bake 30 minutes.
  10. Loosen Yorkshire Pudding; transfer to platter with roast and
  11. serve immediately.

Yorkshire Pudding #2
Ingredients
  • 4 eggs
  • 2 cups milk
  • 2 cups all-purpose flour
  • one quarter teaspoon salt
  • pan drippings
Preparation
  1. After removing meat from the oven, set oven temperature to 450 degrees.
  2. Measure pan drippings and, if necessary, add cooking oil to drippings to
  3. equal one quarter cup; return to pan.
  4. In a bowl combine 4 eggs and 2 cups of milk. Add 2 cups all-purpose
  5. flour and one quarter teaspoon salt. Beat with an electric mixer or
  6. rotary beater until smooth. Stir into drippings in roasting pan. Bake
  7. for 20 to 25 minutes or until puffy and golden. Cut into squares. Serve
  8. at once with roast.
