- Corn Chowder with Red Pepper

- Ingredients

- 2 T. butter
- 1 large diced onion
- 2 diced celery stalks
- 1 small diced red pepper
- 2 1/2 oz. ham or bacon
- 2 cans corn drained or 4 fresh ears of corn
- 3 T. flour
- 4 c. vegetable or chicken broth
- 1/2 c. milk
- 4 T. sour cream or plain yogurt
- 2 T. fresh parsley
- salt pepper to taste
- 1 T. Mrs. Dash Original Blend
- Preparation
- In large soup pot, melt butter, add onion, celery, red pepper, ham/bacon, salt, pepper and sauté for 5 minutes.
- Add corn, cover and reduce heat to low. Steam for 5 minutes. Add flour and stir to coat veggies evenly.
- Add stock and bring to a boil: cover and reduce heat to low. Simmer for 30 minutes. Combine remaining ingredients in a small bowl. Add to soup and heat through, do not boil. Serves 4 to 6
- MARIA'S VEGETABLE SOUP

- Preparation
Save all left over veggies in your freezer. Keep adding to it till you get a full gallon bag or container. Thaw it out. Put it in a blender with ¼ cup of a raw onion. Put in pot, add ½ c water or chicken broth and salt and pepper and bring to a slow boil. Serve hot.
