- STEEL OATS (Slow Cooker)

- Ingredients

- 1 cup uncooked steel oats
- 4 cups water
- 2 cups peeled & chopped apples
- 1/2 t. cinnamon
- Preparation
Combine all ingredients in slow cooker. Cover and cook on low for 8 hours. Add brown sugar when serving if desired.
- CHILI (Slow Cooker)

- 1 lb. ground beef
- 1 - 15 oz. can red kidney beans, drained
- 1 cup chopped celery
- 1 medium to large onion, chopped
- 1/2 cup chopped green pepper
- 1/2 of a fresh jalapeno pepper, seeded and chopped
- 1-14 1/2 oz. can tomatoes, cut up
- 1-10 oz. can chopped tomatoes & green chile peppers
- 1 cup of V8 juice
- 1 - 6 oz. can tomato paste
- 2 garlic cloves, minced
- 2 1/2 t. chili powder
- 1/2 t. ground cumin
- 1/2 cup shredded cheese
- 1/3 cup sour cream
- Preparation
In large skillet brown ground beef. Drain off fat. Add onions and green peppers, garlic and sauté for 2 minutes. Put into slow cooker. Add beans, celery, jalapeno peppers, undrained tomatoes, V8, tomato paste, chili powder, and cumin.
Cover and cook on low heat for 8 hours or on high for 4 hours. Ladle into bowls. Sprinkle with cheese and sour cream.
You can eliminate the jalapeno if you don't like your chili spicy.
Serves 4 to 6.
