- 6 or 8 Italian sausage
- 3 large Onions
- 3 Bell Peppers
- Preparation
Sauté sausages. Remove from skillet. Sauté peppers and onions in same pan (using sausage grease). Serve as a sandwich on toasted French bagette or over pasta. If you still have a lot of onions and peppers left over after eating the sausage. I cook a lb. of pasta and add the leftovers.
- OJ Pork with Rice

- 1 T. olive oil
- 6 thin pork chops
- 1 c. long grain uncooked rice
- 1/2 c. chopped onion
- 10 oz. Chicken broth or 1 can of Campbells Chicken Broth
- 1 c. orange juice
- 3 T. chopped fresh parsley (save one T. for sprinkles on top)
- Preparation
Brown onions and chops in oil in skillet. Remove chops. In same skillet, combine rice and cook and stir for 3 minutes. Gradually add in broth, oj, and 2 T. parsley. Heat to boiling. Return chops to skillet. Reduce heat to low. Cover and cook for 20 minutes. Sprinkle remainder parsley on top.
- PORK CHOPS WITH MUSHROOMS

- Preparation
Sautee pork chops in skillet with a little garlic and olive oil. After they have browned, cover completely with water. Let simmer for 45 minutes. Add fresh mushrooms, cook for 15 minutes more.
