- BBQ SALMON

- Ingredients

- 2 T butter
- 2 T brown sugar
- 2 garlic cloves, minced
- 1 T lemon juice
- 2 t. soy sauce
- 1/2 t black pepper
- 4 (1 inch thick) salmon steaks
- Preparation
Combine all ingredients except fish in sauce pan. Cook until sugar is dissolved. Meanwhile, grill salmon, covered, over medium heat for 5 minutes. Turn salmon, baste with mixture. Grill 10 minutes longer.
- WHITEFISH ALMANDINE

- 1/4 c flour
- 1 t. seasoned salt
- 1 t. paprika
- 2 lbs. whitefish
- 1/2 c butter
- 1/4 c slivered almonds
- 1 T. lemon juice
- Lemon slices for garnish
- Preparation
In large Ziploc bag, combine flour, salt and paprika. Add fish and shake to coat. In skillet melt 1/4 cup butter, add filets. Cook medium for 5 minutes on each side. Remove and place on platter. In same skillet, melt remaining butter, add almonds and lemon juice. Heat and stir until browned. Spoon mixture over fish. Garnish with lemon.
- FRIED FISH

- Any white fish
- Flour
- Preparation
Dredge fish in flour, fry in olive oil till crisp (about 2 minutes on each side).
For something more gourmet, after frying, glaze pan with a couple of spoonfuls of capers and a generous amount of lemon juice.
- ORANGE ROUGHY WITH PEPPERS

- Ingredients

- 1 lb. Orange roughy, cut into 4 serving pieces
- 1 onion diced
- 2 red peppers, cut into julienne strips
- 1 t. dried thyme leaves
- 1/4 t. black pepper
- Preparation
Heat oil in skillet. Layer onion and peppers. Sprinkle with half thyme and pepper. Place fish over peppers and sprinkle with remaining thyme and pepper. Turn burner on high until fish is hot enough to begin cooking. Lower heat and cook fish for 15 minutes.
- Poached Salmon with Dill Sauce

- Ingredients

- 4 salmon fillets (1 lb.)
- 1 cucumber
- 1/3 cup light sour cream
- 1 T Mayo
- salt to taste
- 1/4 t dried dill
- 1 t fresh lemon juice
- 1-2 cups water
- 1-2 cups dry white wine
- Preparation
Cut cucumber in chunks and finely mince in a blender. Add sour cream, mayo, salt, dill, lemon juice, and puree until smooth. In skillet place enough water and wine equally to cover salmon. Bring to boil. Add salmon and simmer 5 minutes. Remove from liquid and drain on paper towel. Place on plates and spoon sauce over salmon.
- Black Cod With Soy

- Ingredients

- 1 lb. black cod or Chilean bass
- 4 T. Chinese cooking wine or rice wine (Sake)
- 4 T. soy sauce
- 4 T. water
- brown sugar to taste
- 4 to 6 pieces of ginger (chopped)
- 2 stalks green onion, thinly sliced
- Preparation
Grill fish on griddle. In the meantime, in a small sauce pan heat soy sauce, water and sugar over high heat. Remove from heat once it has boiled. Cover fish with a layer of ginger and green onion and pour sauce over fish. Serve.
