Ingredients
  • Beef chunks
  • Onions
  • Carrots
  • Celery
  • Potatoes
  • Zucchini
Preparation

Brown beef in pot with onions. Cover with water and simmer for 2 hours or until tender. Add other ingredients and cook for 20 to 25 minutes.

Better the next Day Brisket - By Michael's Mom
Ingredients
  • Brisket, 3 to 5 lbs.
  • olive oil (optional)
  • carrots & potatoes (cut in pieces)
  • onions (chopped)
  • 1/2 green pepper (chopped)
  • 2 celery stalks (chopped)
  • 1 lb. can tomatoes (mashed)
  • 1 bay leaf
  • 1/2 t. salt
  • Pepper & paprika (to taste)
  • 1 cup cooking wine
Preparation

Brown a 3-5 pound brisket slowly in its own fat. You can add oil if desired. It should take about 30 minutes. Remove meat. Brown onions, green pepper and celery. Return brisket to pot. Add tomatoes, bay leaf, salt, pepper, paprika and cooking wine. Let simmer for 2 - 2 1/2 hours. Add pieces of potatoes and carrots in the last 45 minutes.

MOM'S BRISKET
Ingredients
  • Brisket 4 to 5 lbs.
  • olive oil
  • 2 onions (diced)
  • 2 large cans of stewed tomatoes
  • carrots
  • potatoes
  • bay leaves
  • salt & pepper
  • 1/2 cup red wine
Preparation

In a large pot, brown brisket in oil. When finished, remove from pot then saute onions in a little olive oil. When finished, return meat to pot. Add tomatoes and bay leaves, cook slowly. After one hour, add red wine, carrots and potatoes. Cook for at least two more hours or until tender. Remove bay leaves. Salt and pepper to taste.

Steak Diane
Ingredients
  • 4 filet mignon steaks
  • salt & pepper
  • 4 T. butter
  • 2 t. Dijon style mustard
  • 4 T. shallots
  • 2 T. butter
  • 2 T. lemon juice
  • 3 t. Worcestershire sauce
  • 2 T. fresh chives (minced)
  • 2 t. brandy
  • 2 T. fresh parsley (minced)
Preparation

Season both sides of meat with salt and pepper. Melt 4 T. butter in skillet, add mustard and shallots. Sauté for 1 minute. Add steaks and cook about 4 minutes on each side for medium rare. Remove steak. Then add into pan drippings, 1 T. butter, Worcestershire sauce and chives. Cook for 2 minutes. Add brandy, pour sauce over steaks. Sprinkle parsley over the top.
